Not just for vegans!
We had some specific requests for vegan ideas, but even the most ardent carnivores will find this packed full of flavour!
You can adapt this for any veg you can get in season that will withstand roasting in the oven and then warming up again in the microwave at work. You can't use any vegetables as some go mushy and make it a bit slimy, but things like squash, sweet potatoes, courgette, cauliflower, beetroot, carrots, mushrooms, celeriac, peppers, swede, parsnip, turnip should work really well.
Nutritional yeast sounds disgusting, but is such a versatile store cupboard ingredient. You can use it to add extra flavour to all sorts of foods, such as pasta, soups, pizzas. You can use it to make a vegan cheese sauce too.
Because it keeps so well, I have a little pot of it in my pigeon hole at work to use whenever I want it.
